These Sparkling Snowball Cookies are literally like little bites of winter magic.
The first time I made them, I popped one in my mouth and it just melted away.
Sweet, nutty, a little crumbly, and seriously festive.
I love how delicate and pretty they look all dusted in powdered sugar, like tiny snowballs.
Making them is easier than you think, especially if you just use a hand mixer and a little patience.
Every time I bake them, I get memories of making cookies with my family at Christmas and it just makes the whole kitchen feel warm and cozy.

1 cup unsalted butter, softened
1/2 cup powdered sugar for the dough
1 teaspoon vanilla extract
2 cups all-purpose flour
1/4 teaspoon salt
1 cup finely chopped pecans
1 cup powdered sugar for rolling
Butter makes the cookies rich and super tender, literally melt in your mouth.
Powdered sugar blends so smoothly into the dough and makes them look snowy when rolled.
Vanilla adds that sweet, warm aroma that makes you wanna eat the whole batch.
Flour gives them structure, salt balances the sweetness, and pecans add that toasty, nutty crunch.
Rolling them in powdered sugar at the end gives that magical snowy finish that is basically Instagram worthy.
First, preheat your oven to 350°F and line a baking sheet with parchment.
I always do this because cleanup is way easier and the cookies never stick.
In a large bowl, I cream the butter and sugar with a hand mixer on medium for about two minutes until it is light and fluffy.

This part is key because it’s what makes them melt in your mouth. Then I toss in the vanilla and mix for another 30 seconds.

In a separate bowl, I whisk together the flour and salt and slowly mix it into the butter mixture on low speed.

Just mix until combined, don’t overdo it or the cookies get tough.

Then I fold in the chopped pecans with a spatula, making sure every bite gets that nutty crunch.

I scoop out tablespoon sized balls of dough, roll them gently into little balls about an inch wide, and place them on the baking sheet about an inch apart.

They don’t spread much so you don’t have to worry about crowding.
Bake for 12 to 15 minutes.
Keep an eye on them because you want the bottoms just lightly golden but the tops should stay pale and snowy looking.
When they come out, I let them cool for a few minutes on the sheet, then roll each warm cookie in powdered sugar.

I usually do a second roll after they are completely cooled for that extra snowy magic.
Honestly, it makes them look like they fell right out of a winter wonderland.

I love putting these on a platter and stacking them like a little snowy mountain. They go perfect with hot cocoa, coffee, or just by themselves.
I sometimes throw them in holiday tins for gifts and people always freak out over them.
They are best at room temperature so you really get that melt in your mouth texture.
I keep mine in an airtight container at room temp for about a week.
If I want them longer, I freeze them for up to three months and layer them with parchment so they don’t stick.
Sometimes before serving I just roll them in a little extra powdered sugar to freshen them up.
Make sure your butter is soft but not melted. I usually leave it out for 30 minutes.
Chop your pecans finely, it makes rolling easier and the crunch is even.
Don’t overbake. Peek at 12 minutes because you want pale tops with just a hint of gold on the bottom. Double rolling in powdered sugar is worth it for the snowy look.
And if the dough is sticky, just chill it for 15 minutes and it’s way easier to handle.
