I have to admit, I’m kinda obsessed with these Pistachio Mistletoe Dream Crepes.
They look like something straight out of a Christmas movie.
That soft mint-green color just screams holiday cheer, and the pistachio cream inside is smooth, nutty, and perfectly sweet without being too much.
I made them for brunch last year, and my kitchen smelled like vanilla and toasted nuts all morning.
My friends could not stop talking about them, and honestly, I felt pretty proud. They look all fancy but they’re actually super easy once you get the hang of flipping crepes.

1 cup all-purpose flour
1 cup milk
2 large eggs
2 tablespoons granulated sugar
1 tablespoon melted butter
1 teaspoon vanilla extract
1/4 teaspoon salt
Mint green food coloring, about 4 or 5 drops, or mix green with a tiny bit of blue
8 oz cream cheese, softened
1/2 cup powdered sugar
1/4 cup pistachio paste, or blend 1/2 cup finely ground pistachios with 1 tablespoon water
1 teaspoon vanilla extract
1/4 cup heavy cream
1 cup whipped cream
1/4 cup chopped pistachios
Fresh mint leaves if you feel fancy
Flour gives the crepe that soft and bendy texture, and milk keeps the batter smooth. Eggs make everything hold together and add that golden touch.
A little sugar and vanilla give warmth, and the melted butter adds richness. The mint-green color makes the whole thing feel festive and fun.
The filling is where the magic happens, with cream cheese making it creamy and tangy, powdered sugar adding the right sweetness, and pistachio paste bringing that rich, nutty flavor that makes you close your eyes for a second.
A touch of vanilla makes it all cozy and smooth.
I love topping everything with fluffy whipped cream and a sprinkle of chopped pistachios for crunch. The mint leaves just make it pop.

I start by grabbing a big mixing bowl and whisking together flour, milk, eggs, sugar, melted butter, vanilla, and salt. I whisk until it looks smooth and no lumps are floating around.
If I’m feeling lazy, I toss everything in the blender because it works like a charm.
Then I add a few drops of food coloring until I get that soft mistletoe green.
I cover the bowl and pop it in the fridge for about 10 minutes while I make the filling.

While the batter chills, I work on the filling.

Then I add the pistachio paste, vanilla, and heavy cream, and beat it again until it turns into this dreamy, nutty cream.
The smell is so good it’s hard not to grab a spoon and eat it right there.

I heat up a non-stick skillet over medium and brush a little butter on it. When it’s hot, I pour about a quarter cup of batter in and swirl it around until it spreads into a thin circle.
I cook it for about a minute or two until the edges start to lift and the bottom gets light golden. Then I flip it carefully and cook for another 30 seconds.
I stack them on a plate as I go. I usually get around eight crepes from this batch, depending on how big I make them.

I lay one crepe flat and spread a couple of tablespoons of that pistachio cream all over it.
Then I fold it in half and in half again to make a cute triangle, or sometimes I just roll them up like little logs if I’m feeling fancy.
I repeat with the rest until my plate looks like a stack of edible Christmas ornaments.

I top each crepe with a dollop of whipped cream.
Sometimes I pipe it if I want to impress guests. Then I sprinkle chopped pistachios on top for that crunch that makes every bite perfect.
If I have some fresh mint leaves lying around, I throw a few on top just because it looks so pretty.

I love serving these warm, straight from the skillet, when they’re still soft and the filling is just slightly melty.
They’re perfect for Christmas brunch or as a fancy dessert after dinner.
If I’m feeling extra festive, I add a drizzle of honey or a few mint leaves to give it that mistletoe charm.
Pair them with a peppermint mocha or even a pistachio latte and it feels like holiday heaven.

If I somehow have leftovers, I keep the crepes and filling separate in airtight containers. They stay good in the fridge for about three days.
I reheat the crepes in a skillet over low heat for about half a minute on each side so they stay soft. The filling tastes great cold or at room temp.
I don’t recommend freezing the filled ones because they can get soggy, but plain crepes freeze perfectly for up to a month.
I just layer them with parchment paper and slide them into a freezer bag.
Letting the batter rest makes the crepes way more tender and easier to flip.
Add the food coloring slowly until you get the green you want.
A good non-stick skillet is your best friend here. If the batter feels too thick, a splash of milk fixes it right away.
You can even make the batter and filling a day ahead, which is awesome for busy holiday mornings when you just want to cook, plate, and relax.
